Rotisserie Chicken Salad
The perfect side dish for a Sunday brunch, afternoon barbecue/picnic or potluck. This recipe is fast, easy, and convenient.
- medium mixing bowl
- chef knife
- Wooden spoon
- 1 rotisserie chicken (whole fully cooked store bought rotisserie chickens, hand shredded then roughly chopped)
- 3 eggs (hard-boiled, chopped)
- 1½ cups mayonnaise
- ¼ cup red onion (finely chopped)
- 3 tbsp parsley (chopped)
- salt & pepper (to taste)
Dressing: mayonnaise is the base of this dish.
In a medium bowl combine the mayonnaise, hard-boiled eggs, onion, parsley; season with salt and pepper to taste, and mix well.
Add the chopped chicken to the dressing, mix well and taste for salt.
Cover and refrigerate until chilled.
