Kale Salad

Healthy eating is good for you, and can also be delicious. Try this easy to prepare kale salad recipe. It keeps well in the refrigerator, and it's packed with nutrients and fiber. See for your self how amazing kale salad can be, when prepared the right way.

  • 1 lb Kale (Remove kale leaves from stem, and slice thinly (1/4 in ) ribbons.)
  • 1 small Red Onion (Sliced thin with a mandolin (to the thinnest setting) or a knife.)
  • 2 tbsp Lemon
  • 1/4 c Extra Virgin Olive Oil
  • Salt (To taste)
  • Pepper (To taste)
  1. Washing the kale.

  2. Remove the kale leaves from the stem (you can use kitchen scissors or a knife), stack leaves, roll into bundles, and slice into thin (1/4 in ) ribbons.

  3. Thinly slice the red onion (with a mandolin set to the thinnest setting or a knife).

  4. In a large bowl combine kale, and onions.

  5. Massage kale and onions with a pinch of salt and oilive oil.

  6. Squeeze lemon juice over the salad, add additional salt, and pepper to taste.

  7. Toss well, refrigerate for 10 min. Enjoy!
